The Kanetsune KC-735 is a 180mm santoku from the Granshe SX series, sized for the everyday chopping, slicing, and mincing that make the santoku one of Japan's most popular all-purpose kitchen knives.
Its AUS-8 stainless blade is hardened to HRC 57–58 for reliable edge retention and easy maintenance. A wood handle, welded stainless-steel bolster, and full-tang build provide a solid, balanced feel.
